Job Description

  • Chemically analyzed checked quality of raw materials and final products such as salt content, Free Fatty Acid (FFA), Acid Value (AV), Peroxide Value (PV), and Iodine Value (IV) using an auto-titration system. Moisture was also analyzed using a moisture balance and vacuum oven. Water activity (AW), fat, protein, ash, bulk density, refractive index, and specific gravity were also analyzed. The color of incoming samples was compared to factory specifications. Furthermore, analysis melting point of fat&oil using a Melting Point (also known as a slip test) and analyzed wet gluten, pH&conductivity. We also used a Near Infrared spectrometer, a seive machine, a Digital Egg Tester, and a rotary evaporator.
  • Incoming packaging was analyzed using a Tenside machine, measuring heat seal, C.O.F., bonding, and peeling. The amount of water and oxygen permeable to the packaging was also measured. and measure the pressure of the boxes using a BCT machine. Measure size, color, thickness, weight, barcode, and letter clarity. Measure the pressure of soft candy.
  • Rapid microbial analysis of food samples, such as Aerobic Plate Count analysis, Compact Dry Method analysis of Coliform/E.coli/Yeast/Mold, Bacillus cereus analysis, Clostridium perfringens analysis, Salmonella analysis, and Staphylococcus aureus analysis.
  • Sensory analysis of food samples, such as Quantitative Descriptive Analysis (QDA), Triangle test, and Hedonic test.
  • Production Plant about visited production process and quality analysis in each production lines such as quality analysis in production line fried food checked about free fatty acid in oil.
  • Trained on QA&QMS online such as key equipment for analysis, principles of sensory evaluation and standard laws in food industry.
  • Participated in a joint cooperative education project between the university and internship site to study the feasibility of using near-infrared spectroscopy for protein and wet gluten analysis. and moisture content in wheat flour samples compared to standard methods.
